Event description
In the Middle Ages a truffle, known already in antiquity, was established as a highly esteemed dish in the high court kitchen and among the nobility. J.A. Brillat-Savarin describes him as a "culinary diamond". In Istria, the truffle appeared at the end of the 20th century on menu of restaurants, tourist farms, etc., It was even served as a traditional dish, although it never actually was one. Nevertheless, today it represents a unique symbol of the gastronomic identity of Istria, a combination of tastes and nutritional heritage, which will be addressed at the event by ethnologist Tina Novak Pucer and innovative modern cuisine, which will present and offer to us a taste of the leading provider of Istrian truffles - Žigante tartufi d.o.o.
